With much regret, have to add my voice to those who've expressed profound disappointment at the direction The Dabney has taken in recent years. In the mid 2010s, this was one of DC's best restaurants from food quality to service to venue and value. Thought they deserved the Michelin star. And, the Dabney Cellar on 8th was a very unique and wonderful spot.Now? With the Cellar closed for many years, the Dabney has gone super premium with stratospheric pricing and expectations to match. A much tougher table to book than it once was, all part of the new elite model and marketing. Three stars rather than even lower because Chef Langhorne's talent is undeniable. The problem? Even at the highest end, there are just too many other spots now in the DC area, many also Michelin starred, where one can spend the same or less than at the Dabney and get better consistency and a more relaxed and enjoyable experience. There's just no room for error now. Yet humans sometimes make errors whether in the kitchen or dining room/front of house. You have only to read through the various reviews of the past 2-3 years to see this.Hopefully this new business model is working like gangbusters for them. I'm sure many from out of town book just due to The Star. But, as someone who frequents spots from the highest to lowest brackets in our town, this ain't doing it for me anymore. It makes me sad that such a trailblazing exemplar seemed to pivot in pursuit of revenue maximization, rather than creating the profitable but unique and reasonably priced experiences for which they were known 6-8 years ago. They've lost sight of the customer. They've disregarded the customer's desire for value, at whatever price level. While there is still much good food to be had at The Dabney, one must ask the age old question: Is it worth it? My answer: no way.
