A taste of Ginza in Singapore
Last dinner before returning home. As expected, I miss Japanese rice. I went to this restaurant because it was Japanese food. After enjoying a sightseeing boat at Marina Bay, I walked to the Carlton Hotel where this restaurant is located. Failed. It was quite far. You can't take a taxi on the street in Singapore. I mainly use an app to order a car. I arrived quite tired because it was an unfamiliar place. Finally, I found a restaurant where I could understand Japanese. Speaking of Kanesaka in Ginza, there are many disciples and 12 affiliated stores. Two of them are in London and here in Singapore. Onodera is in Hawaii. And Sushi Takumi at the Ritz in Hawaii. It seems that the opportunities to eat decent sushi overseas will continue to increase in the future. I finally made my debut at high-end Japanese sushi overseas. chef's special course $550 I thought it would be about the same as Aozora in Ginza, but there was a service charge and tax on it. I have eaten at Michelin-starred Italian restaurants and Michelin-starred restaurants in France, but this is the most I have paid for eating out overseas. The most expensive ever. And the drinks were a sparkling wine and two glasses of beer. I'm glad I didn't order sake. Kanesa has a wide variety of sake, and is a sushi restaurant where you can enjoy alcohol, but I was surprised when I saw the prices in Singapore. The meal consisted of eight appetizers, nine nigiri with egg, a bowl of soup, and dessert. Monkfish liver wrapped in mochi. In August, we compared purple sea urchin and red sea urchin. Crab with yuba sauce. Steamed abalone, grouper, and other dishes unique to Japanese cuisine. White and red meat, conger eel, and egg were also served in small portions suitable for Japanese people. However, nine nigiri wasn't enough to fill me up, so I ordered an extra roll and another striped horse mackerel. In Ginza, I think they had about 12 to 13 pieces. The dessert was a substantial offering of muskmelon, shine muscat, pear, and matcha ice cream. It was definitely "Kanesaka." It was a great pleasure to be able to enjoy the taste of Ginza overseas, and I was very impressed. However, in terms of the price, it was a good learning experience for me about eating proper sushi overseas.

Shinji, at St RÈgis Seems this is my Japanese Experience Month! Last time I visited Shinji, was when they first arrived at Raffles Hotel, 12 years ago, (they moved to Carlton Hotel next door as Raffles renovated yet once again) Todate 2 Restaurants in Singapore, and 1 Michelin Star! Oh what a meal it was, actually with my expectations super high, it came down to be quite just above average! Somewhat disappointing, but then again, it really depends on what one expects! Value-Price relationship didn’t impress, at about 250.-$ (including water & beer, green tea wasn’t offered) per person for Lunch one of course has to expect something of a certain high standard! Had a number of Sushi at other high end restaurants lately and as such I had a measure of comparison! Getting down to it, the fish was fresh, no doubt about it, the rice a bit on the loose side, I got the impression that the passion had disappeared and it was a tad run of the mill! Possibly taking care of 2 restaurants too much? My friend who invited me was a little apologetic, as he also had higher expectations! But enough of that! Things that stood out in the wrong way were: The Tiger Prawn was overdone, the Conch not properly prepared and quite tough & chewy, the Mackerel marinate too strong, but especially the Miso Soup, half way through had bitten on a piece of shell from a clam! Lucky I didn’t swallow as the edges were quite sharp! Another annoyance was the pre-cutting of some fish, didn’t impress either! Oh well, not my best day! The rest of the Sushi pretty much standard marinate, more or less the same across all the small morsels! Service was decent and friendly! Had a meal with my Indonesian friends who treated us at Shinji St Regis. After my friend indicated his choice of omakase meal for 4 of us for the night, he asked for recommendation of the sake to pick. After scanning through the menu, I noticed the sake price were generally less than $400 a bottle. The staff brought out 2 bottles, a sweet and a not so sweet. We chose the not so sweet bottle. I paused and asked for the price, the sweet one $1400 and the other $780. As the choice was made, I did not comment further. After the meal, I commented to my friend that the meal was great, but the recommended sake was 'cut throat'. We laughed it off. Not a good feel after the meal for me, honestly. Told my friends, I will bring them to Waku Khin and Shoukowa next time when they are back in Singapore. Had better experiences there which I would love to share with my friends.

One of the longer standing fine dining sushi restaurants in singapore, with michelin star to boot
4 different set menus for dinner, at varying cost. A couple of cooked dishes and a procession of sushi. Strangely no uni on the $450 menu today, but all the other usual suspects are there. Plus (china!) caviar
All chefs are japanese, and quite friendly with ok english

We had lunch at the shinji tanglin, we ordered the yume omakase, I couldn’t find any fault at all about the foods - all done excellently. We love the foods, the ambience, and the service very good too. We’ll be back for more.

I don't think I've ever spent that much on one meal in Singapore, so I had high expectations. But Shinji did not disappoint; my friend who's a worshipper of all things Japan could not stop raving about the freshness of the food, the exquisite display of each dish and attention to details. I must agree, even if I may not be as dramatic. Good job and no wonder you have that Michelin star! Kudos!

The omakase set consists of a number of courses, punctuated with various flavours of sushi. It's served by the expert chefs at the counter and the fish is fresh.
If you pay a bit more than the standard omakase set you get some interesting choices of fish, in the sushi in particular. Really enjoyed some of the other dishes too.

It’s the original tasty of Japanese restaurant! Just delicious and when you have the freshly wasabis just prepared front of you you can be sure that is the high quality Japanese culinary.

And we were not disappointed at all.
Shin menu was our choice. We added a few items to the delight of the Head Chef, Kobayashi San and the evening went by like a breeze. We had plenty of delicacies. Were we happy that we had a short distance to walk back to our hotel

Had a wonderful lunch here. The food was amazing, the service was fantastic especially to chef and the service staff was excellent for sure we are coming back again with my friends.

One of my best Japanese meals, ever. Top notch fish, of course. Personal service by the chef at the sushi bar, kept putting food in front of me at the right pace and remembered what I did and did not like. Atmosphere is relaxed, quiet, minimalist elegance. Waitresses careful to refill water and clean up.
I went for the 180 SGD tasting menu YUKI, 15 different servings of fish, capped with a delicious ice cream in a shell-shaped biscuit.
Add 10% SC and 7% GST as always in Singapore. Total of 221 SGD with no alcohol.
1 Michelin star well earned.

Had a fantastic anniversary dinner experience here. Can’t praise them enough and they deserve way more than just one star. Our top japanese restaurant in Singapore, bar none. Our chef was amazing - Keiichi Kobayashi. Professional, skilful and thoughtful, he gave us a memorable experience. Staff was really good as well, will always come back here
