The Germanic world has been known for its wars, and Austria is no exception. However the war that is raging at the Hotel Sacher is unlike any other that I have come across. About a century ago the Pastry Chef at Hotel Sacher created a new and delicious cake: which the Hotel called the Sacher Torte. The torte became so popular that the pastry chef recieved funding to open up his own coffee house and pastry cafe, which he did, bring his torte recipe with him. However, the Hotel didn't like this and continued to serve the torte, claiming that they were the ones who invented it. The Pastry Chef begged to differ, and claimed that he had invented it and that his place was the true home of the original sacher torte. And so the war continues to this day.I tend to side with the Sacher Hotel, because if for no other reason the cake clearly bares it's name. After all, we do not call it Chef Stefan's Torte, we call it Sacher Torte. But the war is purely ritual now... one hundred years later, because every place in Austria serves pretty much the same delicious Sacher torte.. and you can even find fake Sacher tortes in America in some places (but they are fake).So what makes a Sacher Torte so amazing. Well, when it came out, most German and Austrian cakes were either fluffy, or covered in some kind of custard. ANd they often had multiple flavor combinations, like crust, filling, fruit, cake, and frosting. But the Sacher Torte is so very simple, rich and heavier than all the rest. It is only chocolate. Delicious chocolate filling almost like coco )elley, spread between two layers of very wet and heavy chocolate sheet cake (almost as heavy and rich as a flourless chocolate cake only much better), and then frosted with... yes...milk chocolate (more like a melting chocolate bar than frosting really). The slices are almost black they are so rich, and you can feel their heaviness on the plate. The slices are small... and they go perfectly with a rich cup of coffee with cream and sugar (called a Brunner in Austria). And in my opinion there is no better place to get this combo than at the Hotel Sacher: THE original creator of the Sacher Torte.PS: There are other things offered here as well... entire fine meals in fact. But truly... in the prescience of such a cake: who cares.
