Our final night in Vegas we decided to stay close to our hotel having driven quite the distance to get back to our departure city. Olives had room so we made a reservation and were looking forward to the experience. We would have given the place a five star review as everything was top notch except for our Caesar salad, which was badly overdressed and not even edible. It was picked up and taken away basically untouched without even a question posed. In hindsight we should have said something. Other than that glitch the entire evening was top drawer. Our server Jada is as excellent, very attentive and provided us with some guidance throughout. The beef carpaccio was super yummy as was the roasted branzino. The place itself is beautifully decorated, the glass wear, plates and cutlery also very high end. There are so many choices in Sin City, we were happy to have chosen Olives.

He knows that shit inside and out, and has helped guide me through many of my favorite workflows on this subject. He trusts me with finding the latest cuisine. This time I selected Todd English's Olives at the Virgin and our feast included: Table Bread [with olive variety spreads], Tuna Tartare [cucumber, crispy rock shrimp, spicy sesame dressing], Beef Carpaccio [gorgonzola polenta, balsamic onions, scallion cream, parmigiano], Wood-Grilled Squid and Octopus [braised chickpea vinaigrette, baby heirloom tomato], Chicken Parmigiano [mozzerella, roasted tomato sauce, fried basil], Pappardelle [borolo braised short rib, pot roast vegetables, horseradish cream], and topped this all off with the Banana Tiramisu [banana cake, espresso whipped cream, candied hazelnuts]. You better love olives if you come here, they are abundant in everything. His beef carpaccio took the title from Nusret's and set a new standard for flavor for the dish. The plating, the oils, olives on it, and the hidden polenta under the mound of tasty tasty vegan triggering meat was to die for. I'd go back for it alone, it's the best I have ever had. His chicken parmigiano was beyond cheesy too, perfect for any kid from Chicago. I don't get to the Virgin too often, but next time I come through for a concert I'm booking this place! Enjoy fam!

My friend booked us a reservation here before a concert and we were so impressed by how beautiful and swanky it is! We came on a Saturday and there was live music. Already off to a good start. Aldo was our server and he was fantastic. Extremely friendly! And he knew the menu so well. My friend is not eating gluten or dairy and he helped her basically create her own entree meal. So helpful and kind! And not once did he complain. He always greeted us with a smile. To start, they give you some delicious focaccia bread. Bread is my love language so I was thrilled. They serve it with some basil, olive oil and olive dipping stuff. Allll delicious. To eat, my other friend and I split a Caesar salad, the truffle tries and the ravioli. The Caesar salad was sooo fresh and good. Definitely knew I needed to eat something green and I'm glad we ordered it. The fries came with such a good dipping sauce. Yum! And we loved th ravioli. It was all delish! To drink, I wish I remembered the name of my cocktail but I got a signature one that had gin in it. I'm on a gin kick. Ir was so good I ended up ordering two of them haha. Definitely enjoyed my experience here and would love to come back again!

I had the best time at Olives and Chef Todd English was there! It is a cute two staggered level room. Top being more the bar and lounge and down being the main dining room. On the weekends they have live music. If you are a local park at the Paradise Lot. We asked Chef and the staff to tell us what we should try. For apps- --Beef Carpaccio 1000% YES. Best I've ever had --Caesars Salad YES YES For Entrees: --Butter Squash Tortelli- sweeter pasta with maybe 5 or 6 pieces. I would like it more to share rather than solo dish --Mezza Rigatoni Alla Vodka. Has a little kick at the end. A good option for pasta --Veal Parmigiano- classic and great just on the heavier side. That's Sunday sauce was delicious! --Eggplant Parmigiana-- we wanted the veggie dish entree and it was very reminiscent of a chicken/veal parm if you want that alternative. --For side that Parmesan fries were perfect! Dessert we had a apple bread pudding. Oh goodness not to sweet and so soft and comforting. Yes. I loved the food and the entertainment. We sat at the upper bar area to watch a game and it was perfect. Staff was friendly and totally cool. Rudy was our server! I would come back and when I do that Carpaccio will absolute be on my table.

Tried coming for dinner tonight and we were very disappointed that they wouldn't serve us. They are suppose to close at 10pm and we came in at 8:54 pm and the hostess says they aren't serving dinner anymore. If that's the case, they should change their hours of dinner then. What a waste of a drive. I could have gone somewhere else than wasted my time driving off the strip for this kind of service.

The ambiance here is classy, but we didn't dress classy because of the event we were going to afterwards. Place looks so nice and clean. They had live music for the first hour we were there. Great drink selection. We had an Old Fashion and Basil Hayden (my drink of choice). We had Todd's Meatballs, Mushroom Potato Ravioli, and chicken parm. Everything was great except the chicken parm. It just didn't taste like the chicken parm we were used to. Everything else tastes fantastic though. Service was excellent. Our servers were very friendly and we had some good conversation. Overall, my experience here was great and I'd definitely come back.

What an awesome place! I went there with my wife and friends for a pre-concert meal and the experience was great from start to finish. The vibe is laid-back and warm, and the waiter was knowledgeable about everything - especially bourbon. His recommendation on the bourbon was perfect. I had the gnocchi special and it was fantastic. Sure you'll spend a few dollars, but by Vegas standards the pricing was good. A great meal and a great time!

This place has the best happy hour off the strip!! Great prices great drinks and food. Plus a piano variety on the weekends! I go here as much as I can! The Tiffany Martini is a must. The olives are served warm. The aoili is perfect and I can't wait to go back!! Even tried the caviar this time and it was amazing!!

It's a stunning restraunt that a live music while we were there. All of the pasta dishes were fantastic, and they were very accommodating on creating a dish for our young kids. The staff and Manager especially was very kind and wanted to be sure our night was great. I don't want this last comment to be a knock on the food in anyway or the restraunt, but this place had the worst cocktail menu I've ever come across and I mean ever, it reminded me of a kid creating a potion, screwing around with ingredients and very uncommon liquors. I would recommend just adding 3-4 tradition cocktails at least.

Came for the happy hour and loved it! The food options were great - we got one of everything. We weren't a fan of the "spaghetti" but the arancini, meatballs, and fries were solid. The drinks were good too, albeit a little on the sweet side. We'll definitely be back!

It is located in the back of the hotel, we started with several appetizers beef carpacacio, meatballs and spice ronis , and a salad , for dinner we had the short ribs and chicken Parmigiano, service was great but the best part was the singer, she had such a large range Adele to Whitney Houston, good wine selection, the chicken was large enough for 4, had a great time

The next time I visit, I'll make sure to order!Tuna tartar is normal with a taste that I've experienced at least once.It's my first time eating Butter Squash Tortelli. The natural and moderate sweetness keeps coming to mind.The salad, steak, and dessert were not bad or special.

I had been wanting to go to Olive's back when I lived in Boston and I never did. Perfect opportunity to go in Vegas when I was in town for work! I was sat in a nice booth all to myself, and was immediately greeted by my server whom was very sweet. She started me off with Pelegríno and a glass of Pinot Noir. I also enjoyed some of the lovely focaccia bread with a trio of olive tapenade. Warm olives as my app which were delicious. A mix of black and green seasoned and warmed up. The main event - spaghetti and I added meatballs. Those meatballs melt in your mouth! Some of the best I have ever had! Simple and flavorful dish. The ambiance was classy and a bit clubby with the bar right next to it. I liked it though!

Bread service was nice and included a tasty olive tapenade. Caesar was a bit overdressed but was still tasty and the croutons were great (got a half size salad). Mixed olives app was a substantial size and were very warm in temp - need to let them cool down a bit. Tortelli was very good - butternut squash and not too sweet. Took part of the meal to go as large portions. It was just me for the meal and bought it in at $50 with no alcohol before tip - a good deal for Vegas for an high quality app, salad and main meal.

We were lucky in that it was not super crowded when we arrived, so we were greeted and seated within moments. We started with 3 starters and then each had an entree plus a couple desserts.Pre-Starter:Foccacia and Olive Tapenade - be careful! This is so freakin' good! You will inadvertently fill up on this and then hate yourself. So, I'm warning you. Go easy on this.Starters:* Beef Carpaccio - WOW! This is not a small dish... easily shared it between the 3 of us. It's thinly sliced melt-in-your-mouth beef and as you dig into it.... underneath is a bed of arugula and a mound of gorgonzola polenta. You could easily just make this your meal with a cocktail or glass of wine.* Caesar Salad - I think they gave us the whole thing of romaine. Again... very shareable for 3 people. We didn't eat all of it. So, probably could share between 4 people easy. The lettuce was fresh and crisp!* Grilled Squid and Octopus Chickpea salad - it's served warm which is nice. Personally, I think it could have used a bit more seasoning or garlic or something. The squid and octopus were cooked perfectly.... good texture and not rubbery.Entrees:* Eggplant Parm - huge portion. I don't know what kind of monster eggplants they are using but it is definitely shareable if you decide to get some appetizers first. I got a bite and it was really really good. Probably one of the best ever. Great the next day too when re-heated. That's how you know it's a good Epplant Parm is when you can still enjoy it the next day and it's still really good.* Tagliatelle - good portion for 1. I expected more bolognese, but that's just me liking to have more meaty sauce than noodles. ha! Noodles were really good and the bolognese was flavorful.* Branzino - served on a bed of gigante beans. The branzino was perfection. You get the whole fish... minus the head and tail. So, if you like branzino, I highly recommend this one! The beans however were way too salty for me so I didn't eat more than a couple.Desserts:*Cookies - I know... who goes to a nice restaurant and orders cookies for dessert? Me, that's who! hahahahaha I love love love cookies. All kinds of cookies. And this is just what they brought out.... an assortment of all kinds of different mini cookies. I took most home and enjoyed them over the course of the next several days with tea or coffee. They were still quite delicious.* Apple Crostata w/ Amaretto Gelato - Oh My Yum!! Seriously so good. But then I love apples and then you make a dessert that makes the apples even more yummy with pastry and sauce and gelato?! I was SO excited for it reopen and since we hadn't yet been to The Virgin Hotel, it was a great choice for date night...or so I thought. We scored a same day reservation for 8pm on a Friday night but when we showed up, I realized why - the place was 60% empty. We walked in to a very "warmly lit" (AKA very yellow light), with an odd choice of live music playing. They sat us at the back of the restaurant with absolutely no one at the tables surrounding us - I realize this sounds like it may be romantic but it was more isolated and awkward Our server, Marcus, was great. He was knowledgeable about the drinks and since he mentioned they were on the sweeter side, I ordered a gin gimlet instead of a specialty cocktail. When he came back a few min later, what he placed in front of me was definitely not a gimlet - it was over ice and had two limes in it. I sipped it but whatever it was, it was not delicious. Marcus was very chill about it and I swapped it for the Paloma flight This was the best thing I had all night long. The spicy pomegranate Paloma was the winner.We ordered the carpaccio (which was by far my fave item at the old Olives) along with the octopus. ...le sigh... they were both disappointments the carpaccio was SO heavily dressed, I could barely taste the meat. Also the arugula was extremely salty - add that to the giant pile of Parmesan and this dish was a big fail. The octopus was cooked very well but the vinaigrette was super salty as well. (And y'all - I love salt - but I literally had to drink a full glass of water after my second bite.)The focaccia was also just meh. (For great focaccia, go to Al Solito Posto. Trust.)After appies, we decided to head out and go somewhere else. Bummer, Olives PS I almost forgot - there are cocks (roosters) everywhere...it looks like they remodeled an old 50's restaurant, there is something really off about the vibe.

We been here several times for dinner and I have neglected to do a review. Let's say this is probably our favorite restaurant in Vegas. You get the strip vibe without the strip $$ and idiots. We were greater by Andy who couldn't be nicer. The Som Bernard is fantastic. He k ows everything about wine and is a really nice unassuming guy. He can help pick a nice bottle of wine in any price range. Our server Jade was great. The food as always was consistent and so very tasty. I can't wait for them to start lunch service!!

Olive's is by far one of my favorite restaurants in Vegas! Ever since going to the Bellagio location years back I was so excited to try the one at Virgin. Classic and delicious dishes. The beef carpaccio, tortelli and wood-aged ny steak are my favorites!!!

Italian restaurant located inside the newly remodeled Virgin Hotel Resort.The ambience and decor is dark and romantic with a Mediterranean vibe. Our waiter Michael was very knowledgeable and very talkative.We started with the complimentary bread which came with three types of olive tampenade. The green colored one was my favorite.For our meal we split the veal Parmesan which was the size of a pizza. We also split a half order of ravioli. It was delicious and had an interesting nutmeg flavor.I tried the Paloma flight for my cocktail.Overall it was a great experience.

After spending my 35th birthday dinner here about 2 weeks ago, I can still say that I haven't been able to get the food off my mind. It was mine, and all my guests first time eating here and it was amazing. We ordered so much but we had to! It was a celebration and all part of the experience to order lots for the sake of sharing. TE Olives is in the Virgin hotel LV inside (across the theater) and in between the event halls and casa cavalera I think. It's also across Dunkin' Donuts and the business center. I made the reservation ahead of time on OpenTable, requested a preference to sit near a window that could be cracked open and that is exactly what we got. In fact, when my party was seated, my server as well as a manager (possibly) both addressed and explained the accommodation of my request (for covid/social distance reasons) and they made me feel so comfortable. The fact that they acknowledged my favor personally at the restaurant (which I wrote from OpenTable) already set a high bar and the tone for the rest of the evening. I am sad I forgot the name of our server, I will come back and edit once I find out- but let me say this-Eating at Olives is an experience, we were educated on the different categories of dishes, and how each would be prepared and shared at the table. This alone, hearing the descriptions was exciting in itself. This is fresh, special prepared Italian fare with some Mediterranean fusion and flavor. Like I said, the food- unforgettable. A couple of days ago one of my friends even said "I think Olives is my new favorite restaurant in Vegas." Nice. I'mnot going to go into detail describing all the food, because anyone reading this deserves to enjoy a couple hours enjoying the vibe and cuisine of this awesome restaurant, and will experience it for themselves. This is what was ordered:Caesar SaladBeef CarpaccioFiery Chicken Sausage FlatbreadTuna Tartare Charred EggplantParmesan Fries Classic Chicken MilaneseRavioli **Seasonal truffle Ravioli House Bread with Olive spread(s) ** complimentary starter Vanilla Soufflécookies 7 cocktails All of this came out to around $375. Not bad in my opinion! Like I'll mention below, if you come for a drink and 1-2 items you'll still enjoy. For 5 people, there was way more than enough food, and we had leftovers! We ordered enough for 6-7, maybe 8 based on hunger level. The last 2 things I'm going to mention is...1. The environment and mood lighting is fun, romantic, and encouraging for talking during a date, or family/ friend dinner. Or even solo! Come here alone and stillenjoy, it'll be nice as all the waiters, and servers have great personalities. You'll have a mix of alone time and nice chats with the staff. 2. THE DRINKS-COCKTAILS. Delicious, and wonderful, and so so good. I had the Pineapple Dole which tasted just like a fresh pineapple (bc it's made from liquorSoaked fruit), and the Two Pear was also tart and so darn tasty. If you come here just for a cocktail and a quick sit down bite, you'll still enjoy and have a good time.Highlights: the house bread basket alone, is sooooo darn good. It comes with a mix of oven warm bread, crackers, and toasted breadsticks. The vanilla soufflé?? Order it, it's delicate, creamy, buttery. It's the only vanilla soufflé I've had in life. Tip: Lots of free parking available in either parking structure, on Harmon or Paradise. LASTLY- As of now Olives is ONLYOPEN FOR DINNER. Depending on the day, hours vary so check online or call ahead.

Chef Todd English has done an amazing job. The appetisers are the best in Las Vegas. The Beef Carpaccio is the one of the houses mainstays and is the absolute best. Also don't forget the Honey Cake & Serruga Cavier is beyond exceptional.
