Superb
If you’ve read any of my other reviews you’ll know we are huge French food fans and Michelin accredited restaurant fans. So, I booked here to take our niece for her first Michelin experience and our 4th of 2024. After booking I was somewhat apprehensive after reading some reviews here, but we followed through anyway and I’m really glad we did. Staff and service were fabulous. Very attentive and friendly and explained both the menu and wines very well. Ambience was really nice, it’s a beautiful restaurant with an open kitchen (which was really well run and organised). It’s more contemporary than I’m familiar with for Michelin, for example no table clothes. That’s not a bad thing though, they have a style and execute it well. It’s nice to have an option to dine very well but less ‘formally’. Wine - the wine menu (book) is huge. Of course the concept here is wine led (but don’t let that mislead you that the food isn’t amazing!)… many of the wines are honestly out my budget but we settled for a delicious Valpolicella (one of our favourites anyway) and even our niece (who thinks only old people enjoy wine) loved it. I was hoping she wouldn’t as I don’t like sharing! The Food - you don’t get a Michelin star unless you serve great food. And Ma Cuisine is no exception. I love the concept of the menu where Chef Escoffier (no relation; I asked!) has a ‘classics’ which are always on the menu and then a seasonal menu in addition. The classics are, well, classics! Snails. Four gras. Pate en croute (all 3 we ordered) and were perfection. I love the snails in L’Angelus but these were richer and more impactful. The foie gras was decadent and the pate en croute was visually and organoleptically a triumph. What fascinated me in the pate en croute was the taste of offal (heart I think). I’m don’t enjoy offal (except foie gras) but this was so well balanced with the other muscles it added so much complexity to the flavour. Simply stunning. We also ordered the lobster starter from the new Spring menu, I personally prefer lobster a little more cooked but my girlfriend and niece loved it. Superb dish just not quite to my taste so not a criticism. I will definitely be back to try the asparagus starter from the spring menu but we couldn’t have 5 starters between 3 people haha. Main course, my girlfriend and I had the pigeon which was sublime. Really well cooked and the just served with it was deep and perfectly paired. I also loved the farce on the side - really well executed. My niece had the lamb lollipops and loved them. I can’t comment as I didn’t get a chance to taste them she enjoyed them so much. We also had the best dauphinoise I have ever tasted to accompany. I make this myself and I’m quite proud of it…or should I saw WAS quite proud of it! Desserts we shared; soufflé, rose de pommes and cheese (for me). All were delicious. I couldn’t finish the cheese - just too full. My favourite was the rose de pommes. Final comment, i saw some criticism of Chef only visiting certain tables (regulars). Strange comment as I saw him visit every table and he spent a good amount of time discussing with us both his culinary history and the menu. Very nice guy. Infact, any of the criticism I’ve seen on TripAdvisor of Ma Cuisine baffles me. If I could offer one small suggestion it would be to add an amuse bouche. Not because I just want free stuff but I find it a great way to taste flavours I’d never order. Again, not a criticism just a thought. Overall - superb food, wine and staff. I’ll be back. PS - ignore typos I’m using my phone and app isn’t playing nicely

You would love all about Ma Cuisine. The authentic atmosphere paired with amazing service rarely seen in Singapore. The menu is often refreshed and remains unmatched in Singapore. Its not cheap but you ll get a unique experience and food quality rarely seen in Singapore or in France. Let your food journey be matched by a bottle from the selection of the very complete wine list or Porto and finish with the Paris-Brest for dessert!

I’ve frequented Ma cuisine since it opened. Came here again recently after work to have a nice dinner. Really great food and very romantic atmosphere - ask for the outdoor terrace if you want to be transported out of the city for a couple of hours. Their wine selection is fairly overwhelming if you are not familiar with wines so definitely get the sommelier to recommend you the pairing. We ordered a couple of items. I have never been disappointed with food here, always great and especially loved the les gaufrettes aux morilles et madère. Definitely deserving of the Michelin recognition, I will be back soon!

Very good french wine place with exquisite food
Low key michelin star gem, located in a beautiful shophouse in the heart of Singapore. The wine list of 1000+ references that suits every budget, from 100$ to 98000$ ( crazy ) .
The food is typical classic french fare with high quality ingredients, the scallop and chicken Albufera were absolutely faultess.
Will be back with wine lovers friends

Food and wine are fine but the sommelier was not wearing a mask as required by the law. He was interacting with guests throughout the night.

Went here with a lot of expectation but sadly the experience didn't live up to its fine dining, Michelin starred image.
We had reserved an "indoor" table specifically a couple of weeks before dining which was confirmed. We reached on time, but were told there is no indoor space available. We were seated outdoors spread over two uneven tables right next to the gate with no fan/cooler nearby. This is Singapore, known for its high humidity, in a fine dining restaurant which is easily $150++ per person at a bare minimum. I understand that with Covid restaurants have been hit hard so I don't like to complain, but with the money you are charging and the fact that it is a fine dining, Michelin starred place, I really don't expect people to be sweating it out while having dinner.
We asked multiple times when we could get an indoor table or at least get some fan/cooler near our table but didn't get a straight answer. They basically said till some one inside left we would have to sit outside. I don't expect a fine dining place where you can specify where you want to sit to make this sort of error.
The wine selection is great and the owner recommended a great wine for us to start with. We got the cheese platter and some starters. But with the really hot weather and the fact that we were dressed for a fine dining outing it was really uncomfortable. So we waited about 90 minutes and then decided to go home.
Sadly, even in the bill, they charged us for 2 bottles of wine instead of one, thankfully we checked and got them to rectify their mistake.
We didn't get to try the main course and maybe the food is excellent. But as a Michelin starred place, you need to ensure that diners have a great overall experience. And Ma cuisine didn't ensure that at all.

The food was amazing and the service was excellent . The wine list was extensive and great. All in all a great experience!

I agree with one of the reviewers below: Ma Cuisine is not for everybody. This is not a place to rush a meal, or to insist on your way of enjoying food and wine. It is a glorious place where time zooms by and before you realize, 4 hours of perfectly pitched wine and food has been served.
Special Mention to Ms Yogi who is an amazing host and ensured we were well taken care of.
Everything, from the Maison Fragile plates, to their sourdough bread, to the Christofle cutlery, and the Gabriel Glas stemware, is the very best. Yet Ma Cuisine is never stuffy, always encouraging you to kick back and relax in a cosy environment. Its price point and markup is high, but it is great food and wine located in a prime location inside a beautiful heritage shophouse.
The food is precise, seasoned perfectly, and cooked with love and care. I particularly enjoyed the expertly grilled Marron with seaweed butter. Their wine selection is amongst the best in Singapore.
I will be back!
Pressured to consume - Overpriced
Very difficult experience at Ma Cuisine for my first dinner at this restaurant. I've never been this pressured to consume, either the sommelier or waitress. We were hurried to order and drink our wine, even before seeing the menu. We were then hurried to order more, and order dessert without any mention of the price.
Further than this major discomfort, the food is way overpriced and does not offer any real singularity. I would not at all recommend this place for a fine-dining experience.
I booked this dinner for a business meeting, and deeply regretted: I had to apologize to my guests for the poor service once leaving the restaurant. This experience gave a very bad image of French cuisine to them.
