Chef's Surprise
We had a most memorable dining experience at this restaurant. Staff were hospitable and pleasant. They respond promptly to requests and questions, both by email and text message. We were warmly welcomed as soon as we walked in. This restaurant has a small seating capacity. It is a good idea to book as far in advance as possible. Their wine list is extensive. Staff gave us good recommendations on which wines to choose. The chef's surprise menu was indeed a surprise. Every dish was simply delicious. Courses were artfully presented and described to us. Flavors complemented each other but retained their distinct characteristics in the dish. I don't think I can do justice describing the experience. A picture is worth a thousand words. They taste as great as they look. The restaurant only does one seating. We had a nice relaxing dinner. Staff were not pretentious. They made the experience fun, not a stuffy attitude. This is one restaurant to try when in Toulouse.

I went here with my husband for the dinner tasting menu. It was an incredible experience - the food was excellent and the optional drinks pairing was perfect. We were served very original dishes with diverse flavour profiles, and we loved the different spin on a wine pairing! The sommelier/maître D was very knowledgeable, and we even got to chat to the head chef as well. All the staff were incredibly nice and helpful. Even though my husband and I speak French, we were so exhausted and mentally tired that we opted to have things explained to us in English. This was not a problem for the sommelier/maître D, who speaks several languages fluently. Though the restaurant is relatively small, the ambiance was nice and relaxing. I highly recommend this restaurant for a special evening.

It's an exceptional experience that we had, a mystery dinner of 10 plates, very "sea" oriented: it's sublime, fine, original, tasty, surprising and light!. Very very high gastronomic level. Well done to the chef. For Toulouse residents, really far above Py’r and Sarran. A reservation about the room, which we found austere, even sinister. The service is faultless and very professional, it could be a little more cheerful and empathetic…

The proposal was tempting: a surprise menu around seafood, in 10 courses. Throughout the dinner we found noble products on the plate (red tuna, bottarga, but also venison, etc.) and an enormous amount of work. Unfortunately, we only remember from our experience the SALT, which literally ruined some plates. It is not possible that certain dishes sent could have been tasted beforehand by the chef, in particular the Seriole. It's quite terrible to remember at the end of the meal only the excellent refreshment (tarragon sorbet / Calvados) and the dessert (notably the sesame sorbet and the lemon dessert), but not the dishes. We didn't dare talk to the head waiter about it when we left, and the chef didn't come to the room after 3.5 hours of service, too bad! My memory of culinary emotions during meals at Bacaro has not been renewed… I’m sad 😞

A nice clean and purist setting with just a few tables. A unique menu is served for all guests. Special mention to a fantastic wine list : a mix of French and international selection -any wine lovers dream. 14 dishes were served in total. Some clearly stand out , and are true masterpieces like -the blue spiny lobster with carrot sphere in angel hair nest -the stunning tomato sorbet with smoked tabasco, -the celery cream, celery confit, café and anchovies, -the lemon fantasy dessert The majority of the rest are good but without the “wow” feeling. Finally on the back end: -the spider crabs eggs consommé lacks of flavor and character, -the Mediterranean tuna with cured with beet-roots simply lacked freshness (no good tuna should have a “fish” taste) -the onion-licorice cone was lacking flavor harmony and had texture issues -the varnish clams were hardened by the marinade and were somewhat tired with a chewy texture Overall, a perfect gaussian distribution of 4 great , 4 mediocre and 6 good dishes – not good enough in my opinion for what one could expect from a Michelin restaurant and at this price range. I would rather do less , wih more focus.
