We both got the evolution and the first course was a foam Parmesan with foie gras. I like foie gras but this tasted rancid. I literally threw it to the back the throat and swallowed in one bite to just be polite and get rid of it. When other diners were served, we looked at their expressions and seemed like they were trying to hide their repulsion. The second course was the king crab. You only got a nickel size of king crab and a light cracker thing. Taste was ok but nothing memorable. The third course was whatever. Tuna tartare with some brown butter and mustard seed. Really nothing special that you can probably find a tuna tartare somewhere else that's much better. The fourth course was shrimp and mullet. Mullet is such a fishy fish that any flavors paired with it gets lost in the fishy taste. It tastes like leftover baked fish. Shrimp was good. The shrimp was most memorable. The fifth course I believe was this cheese with champagne foam and butternut squash. If you ate the cheese without the butternut squash it was just gross. It tasted like someone threw up cheese, fried it and served it. The sixth course I think was the sweet bread with veal. It was like thanksgiving dinner served with a piece of orange chicken. Flavors didn't go really together. Nothing memorable here other than didn't enjoy. The seventh course was the filet and potatoes. This was good. Steak was done right and potatoes were excellent. Although they gave you one measly baby carrot and the carrot tasted really good with the steak all together, so carrot to steak proportion was off. The desserts were either Black Forest cake reinvented or this elderflower thing. Both weren't anything special. The elderflower one had too many flavor profiles. Really just trying too hard here. Black Forest cake has a bitter aftertaste. Overall, the timing of the dishes was nice. The cocktails were really good. The plating was spectacular. The waiter was nice but couldn't hear them too well. One bathroom with pee all over the seat. Chairs kinda uncomfortable. And mostly the food was really not great. I think the experience we had is that just because a place has Michelin stars doesn't mean the food is good. Seems like they were trying hard and I think maybe this is more of a pretentious "oh I went there and it was fabulous" type of place rather than caring about the taste of the food. I half expected someone to win a prize if they spoke up about truly how they felt about the food kind of like that movie the menu lol.
