Hidden Gem
My partner and I were blown away by our experience with Kaito. The quality of the food is exceptional for the price point, approaching and matching Yasu in many respects. The only note here is Yasu is somewhat more polished in ambience and variety (eg. sashimi, rolls) however it is splitting hairs given the quality and price point at Kaito. We were the only two there for the final seating of the evening which made us feel like we had our own personal chef. Kaito trained at the famed 2 star Saito and it shows. There are a few quirks one should be aware of. One thing to note is that they do not have a wine list but they had no issue in accommodating our request to bring a bottle for a corkage fee of $20. We enjoyed ourselves so much we stayed and ordered more pieces. This was potentially only possible as we were the last and only diners. Be aware that the regular seatings are only 1 hour. For our dining habits this is far too short. I might suggest Kaito think about upping the prices, adding more pieces to set menu and allowing for a longer more leisurely evening but this is just my personal preference. For us I think we stayed for well over 2 hours learning about the fish, techniques and about Kaito himself. This will be our new local go to for Sushi. The restaurant and bar at the back room is cozy and intimate however I will note the front room facing the street is a bit desolate which made us unsure if they were ever open during all the times we walked by over the past couple of years. Kaito was I think unfairly overshadowed somewhat by Shunoko down the street but we have discovered the quality of fish and service to be much better at Kaito. One hesitates to tell others about this gem of a sushi bar out of fear it may become impossible to book! Can't wait to go back!

I was told this is a must visit for authentic sushi Omakase in Toronto. Located near St. Clair and Dufferin, with a very unassuming store front, it has to be your intended destination, or you'll miss it. The website kaitosushi.ca describes all the rules, seating top of the hour; one hour to come, eat and go; payment in advance, etc. The price $55 is very reasonable. Even though I was told in advance about how good the quality of the sushi was, I was still very much impressed. Chef Kaito proudly stood next to a framed picture of his given name Kenshin meaning humble and trust. His name was very fitting, he was very humble and after spending a private (my friend and I only) one hour with him, I have total trust in his skills and expertise of a sushi chef. We were each served 12 quality sushis: scallops, snapper, tuna belly, mackerel etc. Chef brushed on the specially prepared soy sauce, wasabi and other spices, and we ate with our fingers. The sushi bar only had 8 stools, and there were no other tables. It was very cozy and chef gave us his full attention. I felt like I was in Japan. Yes the excellent quality and taste of the sushi also gave the feeling of being in Japan. I echo my friend's recommendation. If you love sushi, you must visit Kaito.

This evening, as member of a party of six, I braved rush hour traffic and head down from Richmond Hill to Corso-Italia for a date with this new 'Japanese' kid in town. Serving traditional Edomae sushi with a few additional 'new-wave' creations thrown in, Chef Kaito offers a $55 Omakase only menu comprising of 11 Nigiri pieces and 1 Hand Roll. A strict one hour time slot is assigned to each sushi-counter space party.......that means, if you are unlucky enough to be stuck in traffic for half an hour, you will only have half an hour to finish the meal!! Good Luck!
This super-affordable meal must be one of the best quality and value-for-money Sushi Omakase experience I have had in the GTA. Featuring quality Neta ingredients, by Toronto standard and at such amazing price point. We were offered Hotategai, Madai, Hamachi, O-Toro, Bonito, Aji, Ebi, Sake, Anago, Hirame sashimi roll and a chopped Akami/Chutoro hand roll. Brushed individually with the chef's house made special soy sauce and garnished with different toppings such as orange zest, grated ginger or fresh wasabi, each Nigiri pieces were stand-out by its own right. However, for me, the true stars were those innovative creations that utilized a smoking machine to bring out another level of taste sensation to the Neta. These were the Smoked Bonito and Smoked Salmon belly Nigiri. Sooo good!!
Only downside was that, in a few isolated cases, the well cooked and seasoned Shari were not properly packed, resulting in a few fallen rice grains when picked up by hand. However, this short fall, I am willing to overlook, considering the fact that our party was late and Chef Kaito was a bit pressed for time to finish serving us ahead of the arrival of the next seating.
This is one sushi-ya that, if it wasn't for the long drive, I could eat there every week!! A definite must-try!
BTW, both Chef Kaito San and the lady server speak quite fluent English and deliver superb care and friendly service. Also, instead of the usual shoga ( pickled ginger ), refreshing diced pickled turnips was offered. An enjoyable, interesting touch!
