Hana re Sushi is this small sushi bar restaurant located in the Anti-Lab Mall off of Bristol. It’s to the left of Calipoke if you’re really looking. Reservations are recommended as I counted 10 seats at the bar and 8 table top seats. We called in advance for a reservation. I don’t normally go out for sushi since I prefer quality over quantity and that can get expensive. Sushi is for special occasions and I was celebrating my raise at work. Hana re was just awarded a Michelin Star in 2019 and is one of two restaurants in Orange County with that distinction; the other being Taco Maria, which also deserves its illustrious star.
My friend Cat A. and I had reservations at the bar for 6:30 pm on a Thursday evening. First of all, parking at the Lab is annoying because the lot is small. They offer valet for $3, if you don’t want to drive in circles. The restaurant is plainly decorated and Chef Atsushi is welcoming as you sit down. The servers were attentive and friendly. I asked for a glass of water and ordered a glass of the Cabernet Sauvignon ($12). We were both doing the Hana re short tasting ($95) that is offered Tuesday – Thursday. The short tasting is 4-5 appetizers, 6 nigiri, and a dessert. For us, it was enough food. If you think that you’d like more, opt for the full omakase ($180-$230). Once that is established, the server asked if we had any allergies and dislikes. We mentioned we didn’t want scallop, which was noted by the chef.
Once drinks were served, we started with a small amuse bouche of pureed squash, topped with sweet shrimp and caviar. The savory flavors started out the evening well with a burst of umami. First up, we were served a small soup bowl with tofu skin, uni, and salmon roe. It was really good. The flavors and the textures were incredible. After that, we were served a bowl of sashimi. I can’t tell you all the fish that was in my sashimi serving but I can tell you a type of yellowtail and tuna was included. I ate it all. No shame!
My favorite appetizer of the evening happened to be the snapper that was served cooked over a red pepper puree. It had a crispy fried leaf on it and the snapper had a perfect sear adding to the texture and complimenting the puree. It was a delightful bite of food. By now, if you’re not enjoying your meal, something is very wrong with you. The couple next to us was celebrating their anniversary and were served a little crab appetizer and the chef showed how fresh those little crabs were because he had some live ones to show us. Then they got cooked and served to us. WOWZA!
Our next dish was a roasted duck appetizer with veggies (cauliflower, potato, squash, okra, etc.) which was so delicious. The duck was perfectly tender and each bite was heaven. We were then served a soup with half of a giant prawn head in it. I just sipped at it but it was really good. Next up was our nigiri. We received 6 pieces of nigiri with the option to choose the last one (uni or toro tuna). I had the striped Jack, yellowtail, tuna, salmon, belt fish, and toro. Cat opted for the uni. The nigiri was paced out in a timely manner and was so good. The sushi was texturally soft, but pleasant and not fishy at all. The fish topping the rice was a good level of thickness. Chef Atsushi does not skimp on his fish. The nigiri was perfectly spiced with wasabi and soy sauce so there is no need to dip more but I did use the ginger to cleanse my palette after each piece. I do have to say that the ginger they use is super fresh and zingy. It was one of the best parts of this incredible meal. The toro tuna was delightfully fatty and melt in your mouth amazing. To finish off our epic meal, we were served almond panna cotta with fresh fruit and crushed pistachios. The panna cotta was lightly flavored with almond and not overpowering which is why I loved it so much. I do not normally enjoy almond gelatin desserts because of the overuse of almond extract but this dessert I liked! It was so good; I never wanted it to end. My water glass was promptly refilled and my dishes were cleared as soon as I was finished with each micro course. The service was phenomenal. Chef Atsushi serves up some excellent sushi. Hana re definitely deserves all the recognition.
