1+ star restaurant in a 3-star wrapping - two stars right around the corner?
Me and my wife visited the restaurant on June 18th, and we had a great time. The young staff was knowledgable and had a great service attitude. The framing of the dinner is the same as at Maaemo, and I think maybe it was Magnus at Magasinet Fäviken (Chef´s table) who first introduced this style of starting and ending in a living room environment while having the main dishes in the dining hall in the middle of that. With more than 20 dishes and a pretty clear concept of local produce, the format of this restaurant is not too different from three-star restaurants, even though Credo has only 1 at the moment. However, 4th of July I believe they will be upgraded to 2 stars. The staff were surprisingly young, but everything was cooked to perfection. They did not overcook or undercook a single thing. Not a single flaw in the preparation. The concept of Credo is local produce with connections to some nearby farms. However, they are not strict. They used Italian truffles, and non-Scandinavian produce like tomatoes and chilies - even though some of them were grown locally. Some of the highlights were langoustines, scallops, the sourdough bread, blood pudding and their sour cream. There is one thing that keeps Credo from being a three star restaurant, and it´s a pretty serious one; it´s the palate of their head chef Heidi Bjerkan. Unfortunately that seems to be the limiting factor. The concept is great, the place is great, the produce is great, the chefs and servers are great, and the format is more than comparable to several distinguished three stars I´ve tried. The tastes are really good with a few missteps with mackarel and smoked roe of capelin (lodde). But there are absolutely no foodgasms on the menu. Never did we hear anyone in the dining hall come with some oohs and aahs or revert to divine silence. At a restaurant clearly aiming for more than one star, that´s a serious flaw. Some of the dishes, like the ice cream desert, were a tiny bit bland, while the turbot, which is maybe the best fish there is(!), was overpowered by some chili tasting paste called gochujang. It was still good, but you could probably have replaced the turbot with just about any white fish without a big difference in taste. Credo has a good thing going and a format that can match anything. A visit to Credo will always be pleasurable, and you will definitely enjoy it. And maybe I am being a bit unfair when comparing to Maaemo in Oslo which, compared to other three stars I´ve tried in Barcelona, New York, Italy etc should have been awarded four stars. So, in conclusion, Credo is a 1+ star restaurant in a three star format. And it just might be that they get their second star on July 4th 2022. It would be well deserved in my opinion. And maybe head chef Heidi Bjerkan should engage some of her young, talented chefs more to evolve the flavours a bit more to take the next step. I think they showed sufficient skill during my visit to deserve the honor.

The service was absolutely superb from beginning to end! You could really feel that this was a high class restaurant. We had 23 courses, and almost all of them were excellent and beautifully presented. For me the mackerel was the "worst" of the evening while the bloodpudding and milk icecream with honey were at the top. We started with 5 appetizers and a great glass of cider, and had 13 courses in the main dining room. These were paired with 7 glasses of wine, one beer and one cocktail. Even though they all tasted amazing and were great with the food, there were hardly anything in the glasses. When you pay 1900 NOK for the full drinking package, you expect to get a little buzz on. Overall, we got perhaps one bottle of wine per person in total and one glass of cider. For the petit fours after dinner, we were only offered coffee, as the pairing menu apparently did not extend to the five last courses of the menu, which was really strange and a huge let down. We had to buy a bottle of wine to accompany the petit fours, and got great help tp choose one. Overall it was a wonderful experience, but we did not think there was enough value for the drink package. The food was though totally worth every penny!

Excpectetions were high, albeit wed eaten at Credo before, back in the oid days. Actually, we´ve been served by head chief Heidi Bjerkan in Ørjaveita, before her spell at the Royal Castle. To make a long menu short: We´re thrilled that the spell came to an end. We felt thouroughly splendid for about five hours, and the investment is near the bottom of our regret list.
